步骤1
for dough, stir flour onto a work place and make a well in center,cut butter into bits and place in the well along with egg yolk, salt and water.using a large knife,mix all the ingredient coarsely,until it look like crumbs. quickly knead into a smooth dough before the butter become too soft. sharp dough into a ball,wrap in plastic wrap, and refrigerate for about 30 minutes.步骤2
roll out dough on work place to a thickness of 1/4 inch.place mold side by side,grease mold lightly, lay the dough over top.gently press the dough down into cup and roll over top with rolling pin to score the dough around edges of the mold.using you thumb,press the dough down into the mold so that no air bubble remain and cut away excess dough with knife.pierce the dough several time with fork and bake for 10-12 minutes without open the oven door. remove mold from oven and let cool.步骤3
make cheese filling, mix ricotta cheese foamy. cut cheddar cheese ,harm into small cubes and add to cheese ,along with onions, garlic and mix well.,stir in salt, pepper ,herb.until mix together.then chill filling until you use. make ricotta filling, mix together all the ingredient list in recipe.petits four with cheese的烹饪技巧
